Maiale Nero ham (whole)
This is the whole leg of the black pig ham produced on the Parma rolling hills only from traditional semi wild pigs. The product is salted and seasoned only with black pepper and garlic without any additives or preservatives. The hams are then aged for a minimum of 24 months in order to develop their full flavour.
Parma Black Pig Ham (tray).
The producer went a long way to recover ancient black pig breeds from the Parma area. Almost disappeared in the sixties, these animals are raised free range on the rolling hills of Emilia Romagna, and they eat mostly what they find in the woodlands. The hams are produced in small batches by master salters and aged for 24 months . The flavour is unique buttery, nutty, earthy but at the same time pleasant and velvety. A niche product only for the true connoisseur.
Organic Salsa Luisa al Balsamì
Salsa Luisa is a revisited organic version of the "Salsa Verde" that is a typical meat accompaniment in the Emilia region. It is made with parsley, carrots, capers, extra virgin olive oil and balsamic condiment Balsamì. It is fragrant and aromatic and it is ideal on meat, fresh cheeses or simply on bread.
Radicchio and Balsamic Pesto.
A wonderful pesto made from the famous bitter radicchio trevigiano with the contrast of sweetness and sourness of the Balsamic Vinegar of Modena. Ideal for pasta, risotto, or simply on cheese or meat.
Chinotto Citrus Slices.
Chinotto is a citrus from the great Italian agricultural heritage. The product is made only using the finest fruits from Liguria. In Italy is tradition to consume preserved chinotto after espresso to fully experience the intense but delicate persistence of the aroma of the citrus. It is also ideal to accompany Parmesan cheese or many other Italian cheeses.

Pernambucco Orange & Calabrian Lemon Jam.
Pernambucco is an ancient variety of Italian citrus that it is grown in small quantities in the Liguria region. This jam is prepared in a way that the fruits are cooked only at 80 c in order to maintain the real flavour of the fruit. The product is smooth, velvety and sensual. It is ideal on bread and butter, on desserts and on cheeses.
Tonda Gentile hazelnut and chocolate spread.
You might have tried other chocolate spreads before but this is made just using the finest Italian "tonda gentile" hazelnuts, dark chocolate and sugar. The result is an amazing product that it is not easy to forget. Intense but at the same time delicate and velvety. Highly recommended on icecreams or just as a spread on bread.
Traditional Balsamic vinegar of Modena 25 years old
This long aged traditional balsamic vinegar of Modena is produced by ACETAIA CLARA in Maranello. It is thick, rich and dense with a complex structure. The product reaches this quality only after a maturation of 25 years using the traditional fractional ageing, it is only made with Lambrusco and trebbiano grapes without any additive. In 2013 Clara won prizes as one of the best producer in the area. This is a little pearl for a small price. Infact the product is not bottled in the consortium bottle for a more affordable price, however quality is just outstanding.
Barile Rosso organic wine vinegar.
Barile Rosso is a red wine vinegar made exclusively from organic lambrusco grapes. This can be categorised as "strong vinegar" as it is more intense than balsamic vinegar. Barile Rosso is ideal for everyday use on salads and cooked vegetables. With its powerful but at the same time pleasant acidity it will not disappoint the most sophisticated foodie.
Balsamì – Organic balsamic condiment of Modena
This is an outstanding artisan gourmet balsamic vinegar of Modena made with just grape must. 5 years old balsamic condiment without any additive. Only organic Lambrusco and Trebbiano grapes. Aged in ash barrels by our artisan vinegar maker in Castelvetro di Modena. It is ideal for everyday use and you can add it to cooked and raw vegetables, grilled meats and fish. We found it particularly good for cooking and reductions.
Organic bottle fermented Lambrusco Grasparossa wine.
Amazing artisanal organic Lambrusco wine with Lambrusco grasparossa di Castelvetro and 5% cabernet grapes. From a small winery in the Modena province which only produces a few thousands bottles per year. The result is quite remarkable. Lambrusco is a red sparkling wine with a unique character. Evanescent purple froth that quickly dissipate. Pleasantly dry with sent reminding spring violet flowers, blueberries and red fruits. With a good acidity is recommended to go with fatty cured meats such as salami and Parma ham. Rich pasta dishes such as tagliatelle alla Bolognese, Lasagne and tortellini. Best consumed slightly chilled in summer as an aperitive wine with a few shavings of Parmesan cheese. With its frank character will not fail to impress the most reluctant wine connoisseur.
Organic Lambrusco Grasparossa di Castelvetro wine.
Re Guerro Lambrusco grasparossa - Charmat method organic wine.
Produced on the rolling hills of Castelvetro di Modena. This DOC wine is a classic of the area. Real lambursco is dry and pleasantly acid and it is recommended to go with the rich Emilia Romagna cuisine such as fresh egg pasta, and cured meats. In summer can be served chilled as an aperitif. Lightly sparkling with tones of violets flowers. It has the classic purple evanescent forth that is recognisable in all good lambrusco wines.
Organic bottle fermented Trebbiano of Modena wine
A white sparkling wine made with 95% Trebbiano grapes with a final touch of 5% Chardonnay grapes. Of course all organic. The wine is bottle fermented with the classic method for one year. The result is crisp and pleasantly aromatic ideal as an aperitif wine or to go with poultry and fish dishes. The bubbles are plenty but soft and pleasant given the natural and slow fermentation. The Chardonnay touch gives to the wine the ideal crispiness while the Trebbiano has the typical aromatic acidity of the wines of Emilia Region. A nice final touch of pleasant bitterness.
Organic PDO Parmigiano Reggiano cheese 24 months
Mouthwatering with a a pleasantly sharp taste of with an incredible kick followed by waves of creamy sweetness with hints of spiciness.
It has an amber crust and yellow pale interior with its typical homogeneous milk proteins gathered together in wither clusters.
In the mouth it feels pleasantly savoury wrapped in soft roundness of the milk.
It has also an Incredible persistence of taste and aroma, definitely clean and harmonious. Emilia Delizia parmesan cheese comes from organic certified farmers in Modena. The cheese can be shipped worldwide, whole or vacuum packed. The classic parmesan wheel weights approximately 37 kg that can be partitioned in wedges ranging from 200 grams to 1 kg.

Organic PDO Parmigiano Reggiano cheese 36 months – extra old
Extra aged cheese Parmigiano Reggiano cheese for a minimum of 36 months. It is spicy and grainy in texture. The rind is copper coloured and the inside is granular and pale. There is a total absence of acid notes, it is dry and crumbly with a wonderful taste. Each bites gives flavour for long time with aromas of dry fruits and spices. In this ageing there are evident clusters of amino acids on the cheese that give even more texture to the bite

Whole Parma ham 24 months – Selected by Emilia Delizia
Not all Parma ham are created equal. Our supplier is a small family operation on the hills of Langhiarano, the capital of Parma ham. They ensure the best quality and best consistency. The product is highly recommended for niche restaurants or delicatessen looking for the ultimate flavours. These hams are aged longer for firmer texture but they maintain their delicate buttery flavour. Very sweet and perfumed. These hams have a lower salt content of the "average" quality hams delivering fantastic sensations. The Parma ham consortium ensure that high standard of animal welfare are respected, ensuring a product of the highest quality. Ingredients are only pork meat and salt.
We sell whole hams only with or without the bone. The hams can be partitioned and vacuum packed at source.
