Auf dieser Tour besuchen Sie einen der traditionellen Produzenten in Langhirano, dem Herz der Parmaschinken-Produktion s\u00fcdlich von Parma, und erleben den gesamten Prozess vom Einsalzen bis zur Reifung.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Der Herstellungsprozess<\/h2>\n\n\n\n<p>Prosciutto di Parma wird ausschlie\u00dflich aus den Hinterl\u00e4ufen schwerer Schweine hergestellt, die in Italien geboren und aufgezogen wurden \u2014 viele davon mit Molke aus der Parmigiano Reggiano-Produktion gef\u00fcttert. Der Prozess dauert mindestens 12 Monate:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n  <li><strong>Einsalzen:<\/strong> Die Keulen werden mehrfach mit Meersalz eingerieben und ruhen in K\u00fchlkammern bei kontrollierter Temperatur<\/li>\n  <li><strong>Vortrocknung:<\/strong> Nach etwa 100 Tagen werden die Keulen in die charakteristische Birnenform gebracht<\/li>\n  <li><strong>Reifung:<\/strong> Die Schinken h\u00e4ngen in gro\u00dfen Reifer\u00e4umen, durch die die Luft des Apennins zirkuliert \u2014 genau dieser Wind ist mitverantwortlich f\u00fcr den unverwechselbaren Geschmack<\/li>\n  <li><strong>Qualit\u00e4tspr\u00fcfung:<\/strong> Jeder Schinken wird von einem Experten mit einer Pferdeknochennadel an f\u00fcnf Stellen gepr\u00fcft.
