Das Original \u2014 <em>Aceto Balsamico Tradizionale di Modena DOP<\/em> \u2014 wird ausschlie\u00dflich in Privatheimen und kleinen Familienbetrieben hergestellt, reift mindestens 12 Jahre in einer Batterie von Holzf\u00e4ssern und wird in winzigen Mengen abgef\u00fcllt. Auf dieser Tour besuchen Sie eine solche <em>Acetaia<\/em> und erfahren, warum ein 100-ml-Fl\u00e4schchen dieses Essigs mehrere hundert Euro kosten kann \u2014 und warum es das wert ist.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Die Herstellung<\/h2>\n\n\n\n<p>Alles beginnt im Herbst mit dem Traubenmost aus Lambrusco- und Trebbiano-Trauben. Der Most wird \u00fcber etwa 24 Stunden langsam auf rund 30 Prozent seines urspr\u00fcnglichen Volumens eingekocht.
