El proceso comienza antes del amanecer: la leche llega, se calienta en las calderas de cobre, se rompe la cuajada y se forman las ruedas a mano. Cada a&#241;o se trasvasa una peque&#241;a cantidad de barril en barril, concentrando aromas y acidez.
