El vinagre se hace empleando una forma productiva antigua tradicional, utilizando principalmente uvas trebbiano cultivadas en la localidad.. El vinagre se envejece en una sucesi\u00f3n de barriles de madera que se vuelven cada vez m\u00e1s peque\u00f1os hasta que ha estado madurando durante por lo menos 12 a\u00f1os, que es el per\u00edodo de envejecimiento m\u00ednimo aceptable para un Tradizionale bals\u00e1mico. En esta etapa, el vinagre ser\u00e1 probado por el organismo regulador, el Consorzio al que pertenece el productor, y si pasa todos los procesos ser\u00e1 etiquetado como affinato, lo que indica un bals\u00e1mico joven, y se embotella con una tapa blanca, tanto en Modena como en Reggio Emilia.<\/p>\n<h2>Vinagres bals\u00e1micos extra viejos en Modena y Reggio Emilia.<\/h2>\n<p>Aproximadamente entre el 30% y el 40% del producto envejece hasta que alcanza los 25 o 30 a\u00f1os. Un vinagre bals\u00e1mico de m\u00e1s de 25 a\u00f1os, muy bien madurado, est\u00e1 etiquetado como vecchio extra (muy viejo) y se embotella con una tapa dorada en ambas regiones. En Reggio Emilia, hay una tercera designaci\u00f3n para los vinagres que se han madurado durante al menos 18 a\u00f1os: se etiquetan como vecchio (viejos) y se embotellan con una tapa dorada.
