Parmigiano Reggiano Production – From Milk to Aged Cheese

This experience includes some of the finest gourmet products produced around Parma. The day begins with a visit to a traditional Parmigiano Reggiano dairy, where expert guides explain each step of the production process in detail.

You’ll follow the journey from fresh milk to finished cheese, visiting the cooking vats, brine rooms, and ageing cellars, before ending with a guided tasting. Watching the cheese wheels take shape and mature offers real insight into the craftsmanship behind one of Italy’s most iconic foods.

Panoramic Winery Visit Near Torrechiara Castle

After the cheese visit, the tour continues to a winery overlooking the spectacular Torrechiara Castle. Here, scenery and flavour come together during a relaxed aperitivo featuring three local wines, including sparkling Malvasia, Lambrusco, and selected DOC wines.

Each wine is paired with carefully chosen finger foods such as reserve Parma ham, aged Parmigiano Reggiano, and traditional breadsticks. After the tasting, a short walk through the vineyards leads to the castle itself (please note: the castle is closed on Mondays).

The experience continues with a visit to a traditional Prosciutto di Parma producer as part of a guided food tour in Parma. During the visit, you’ll explore every stage of production, from the pre-ageing rooms to the long maturation cellars.

Torrechiara Castle – History and Romance

Torrechiara Castle is a medieval fortress overlooking the Parma Valley, dating back to the 13th century and beautifully restored. It was built by Count Pier Maria Rossi, a nobleman and military leader who served the Duke of Milan, Filippo Maria Visconti.

The castle is famously dedicated to Bianca Pellegrini, Rossi’s great love. One of its highlights is the Golden Bedroom, an exquisitely decorated space created in her honour, making Torrechiara one of the most romantic castles in Emilia-Romagna.
