Most visitors to Parma stay in the city and travel out to producers by day. The farm stay works differently: you base yourself at a working agriturismo in the Parma countryside, 30 minutes south of the city in the Apennine foothills, and meet the cheese makers, ham curers, and balsamic producers on their own ground. It is the difference between visiting a place and briefly inhabiting it.

The Farm
The agriturismo is a refurbished working farm with high-standard B&B rooms and generous breakfasts using local produce. It sits in the same Apennine hill zone that produces some of the most complex Parmigiano Reggiano in the region — the higher altitude, cleaner air, and traditional pasture that give mountain-zone wheels their particular character. Staying here rather than in the city means you wake up surrounded by the landscape that makes the food.

The Producers You Visit
The two-night package includes English-guided visits to three of the region’s most important food producers:
- Parmigiano Reggiano dairy — a working caseificio where you follow production from the early morning milk delivery through to the salting and ageing cellars. Tasting covers wheels at different maturation stages.
- Traditional Balsamic Vinegar acetaia — a family producer in Modena where the vinegar ages in a battery of progressively smaller barrels over a minimum of 12 years. The difference between young condimento and a 25-year DOP is immediately obvious in the tasting.
- Prosciutto di Parma producer — a ham curing facility in the hills south of Parma where the legs are salted, rested, and hung to age in the natural air of the Langhirano valley for a minimum of 12 months.

Self-Drive Format
The experience is self-drive: Emilia Delizia provides a route map and arranges your producer appointments in advance, but you travel between locations in your own car. This gives flexibility that a group tour cannot — you can linger at a producer, stop for lunch in Parma or Modena, or add your own detours. A car is essential; the producers are in rural locations that are not reachable by public transport.
The standard package is two nights, which is enough time to visit all three producers comfortably while leaving half a day free for the cities. Parma is 30 minutes north; Modena is around 50 minutes. For those who prefer a single-day guided option with transport included, the Parma food tour covers the same three producers — Parmigiano dairy, balsamic acetaia, and prosciutto curing house — in a single morning.
