Truffle Hunt from Parma — A Private Half-Day in the Apennines
The hills south of Parma are some of the most productive truffle territory in northern Italy — dense oak and hornbeam forests, a river valley microclimate, and centuries of hunting tradition. This private excursion takes you there with a licensed truffle hunter and his trained dogs for a genuine morning in the field, followed by a gourmet multi-course truffle lunch at the farmhouse.

This is not a visitor centre experience. You walk the same ground the hunter works every season, follow the dogs as they quarter the woodland, and learn how the craft is passed down. Transport from Parma city centre is included.

The Hunt
A short drive from Parma brings you into the Apennine foothills — a landscape of chestnut and oak forest, terraced hillsides, and almost no other visitors. At a private estate, the hunter and his dogs take over.
You’ll follow them through the woodland as the dogs work independently, reading the ground, circling back, narrowing in on the scent. When a dog makes a find it signals and steps back; the hunter kneels and uncovers the truffle by hand. The whole sequence — search, signal, dig, reveal — is one of the most compelling things to watch in Italian food culture.

Depending on the season, you may find black summer truffles (May to August), black winter truffles (November to March), or the prized white truffle in October and November. The hunter will explain what is in season and what the conditions have been. Suitable footwear for woodland walking is required.
The Feast
Once the truffles are harvested, you sit down to a gourmet multi-course truffle lunch at the farmhouse table — prepared with what the land and season provide, and centred entirely on the truffle.

Starters arrive in sequence: truffle crostini on toasted artisan bread, crispy truffle-filled rolls, and devilled eggs crowned with sliced truffle — each course more generous than the last.

The main course is fresh pasta — pappardelle or tagliatelle, made that morning — dressed in truffle butter and finished tableside: the truffle you found in the forest that day, shaved directly onto your plate.

The Parmigiano-Reggiano Add-on (Optional)
On request, we can combine the truffle hunt with a visit to a traditional Parmigiano-Reggiano dairy — one of the family-run caseifici in the hills south of Parma that has produced the cheese to the same method for generations.
You’ll see the morning production in progress: the copper vats, the curdling, the shaping of the wheels. Then into the aging cellars, where hundreds of wheels are stacked floor to ceiling and turned by hand. The visit ends with a direct tasting — 12-month, 24-month, and 36-month wheels side by side, with a little local honey and mostarda.

Truffle hunting depends on season and conditions — this is part of what makes it authentic. Our professional hunter knows the territory and the dogs are experienced. Even in quieter periods, following the dogs and watching the craft is a genuinely memorable experience. The gourmet lunch is included regardless of the find.
What season is best for truffle hunting near Parma?
The white truffle season (October and November) is the most prized. Black winter truffles run from November through March; black summer truffles are available from May to August. Each season has its character — contact us and we’ll advise on what’s best for your dates.
What should I wear for the truffle hunt?
Comfortable, sturdy footwear suitable for woodland walking on uneven terrain is essential — closed-toe shoes or light hiking boots. Dress for the weather; the forest can be cool even in summer. We recommend bringing a layer.
